Want to try my Turkey Lasagna style Enchiladas?
2 cups chopped cooked turkey
1 1/2 cups enchilada sauce
1 (4 oz) can diced green chile peppers
1 teaspoon dried onion flakes
2 tablespoons chopped fresh cilantro
12 (6 in) corn tortillas
2 tablespoons chopped peeled red onions
1 cup chopped tomatoes
1/2 cup chopped black olives
16 oz of shredded cheddar cheese
Preheat oven to 350. Coat a 13 x 9 x 2 baking pan with vegetable oil spray
In a medium bowl, combine turkey, 1/2 cup enchilada sauce, chile peppers
dried onion flakes, 1/4 cup olives and cilantro.
Warm tortillas in a microwave to soften for about 1 minute on high.
Spread a 1/4 cup on enchilada sauce on the base of the pan.
Lay 4 tortillas flat ripping a couple in half to cover the bottom.
Spread enchilada sauce to coat the tortillas.
Spread 1/2 of the Turkey mixture evenly over the tortillas
Repeat: Lay 4 tortillas flat ripping a couple in half to cover the turkey.
Spread enchilada sauce to coat the tortillas.
Spread 2nd 1/2 of the Turkey mixture evenly over the tortillas
Top with the last 4 tortillas and spread with remaining enchilada sauce.
Top off with red onions, tomatoes, remaining black olives and lastly
Cover with lots of cheddar cheese.
* add diced jalapenos if you want it hotter *
I spread the right half just under the cheese to make 1/2 hotter.
Bake for about 25 minutes and enjoy with 8 of your friends.
